Tarragon is a semi-persistent perennial herbaceous plant of the Asteraceae (Compositae) family native to Central Asia, cultivated for its fragrant leaves for condiment use. Its harvest is rather early (June) and when irrigated can be subject to several cuts.
It is a small market, probably less than 10 tons, of which 1 ton is produced by the SCA3P.
The essential oil is used both in perfumery and food processing.
